CapalBio was born in Capalbio in 2001, and it is a farm that has always been committed to putting at the center of their work the ecosystem and its protection. A company whose mission is the respect for nature, avoiding the use of chemicals and implementing production systems that respect and defend biodiversity. They produce organic wines for which local vines are used, Sangiovese and Ansonica, to make their Reds and Whites an authentic expression of the territory. The estate has 136 hectares of land, part of which is arable land with vineyard, olive grove and orchard and the rest is woodland where different animals such as the Maremma and Chianina cows are free to graze. The vinification process takes place with traditional methods, according to the rules of the Tuscan school. It remains in maceration for 16-20 days, depending on the year, and grapes are repeatedly trampled in vats a bit like it used to be done in the past, when the grapes were pressed by barefoot participants. Among their excellences stand out the Rosso di CapalBIO Riserva DOC “I Caprai”, the Sassi Bruni DOC, and Filari di Luna IGT all three mainly based on Sangiovese grapes and the white Sassi Chiari IGT composed of Ansonica with the addition of local grapes.
